Two jars can carry the same two words, lion's mane, and hold almost nothing in common inside. One is an extract of the actual mushroom, the white spined fruiting body. The other is a powder grown in a bag on grain and milled with the grain still in it. They cost different amounts to make, they read very differently on a lab report, and they are both sold to you under the same name. The rest is how to tell them apart, and how to read a label so the choice is yours, not the seller's.
The two things sold as lion's mane
"Lion's mane" is a common name, not a promise about what is in the jar. Two different products are sold under it, and once you can name them the whole category gets simpler to shop.
The first is fruiting body extract. This is the mushroom itself, the part you would recognise, harvested and then extracted. The second is mycelium-on-grain, sometimes labelled "myceliated grain" or "full spectrum". This is the young thread-like stage of the fungus, grown through a block of grain and then dried and milled together with that grain.
Both are legally lion's mane, and neither is a fraud on its own. They are simply two raw materials, made in different ways and at different costs. The difference does not show up in the name on the front of the pack. It shows up on the lab report, and in the price.

What the fruiting body is
The fruiting body is the mushroom in the photographs: Hericium erinaceus, a white rounded cushion with soft, fleshy spines that hang down like icicles. It grows on hardwood, and it is the part of the fungus that would, in the wild, release spores to make the next generation. When someone pictures lion's mane, this is what they picture.
Our extract uses the fruiting body only, with no grain in the jar. It is a dual extract, which means the mushroom is drawn out twice, once in hot water and once in alcohol, because some parts of the mushroom dissolve in water and others do not. The finished extract is standardised to an 8:1 ratio, so 8 kg of dried mushroom goes into every 1 kg of extract. In that extract, a third-party lab measured beta-glucans at 26.20% and total polysaccharides at 30.22%.

What mycelium-on-grain is
Mycelium is the fungus before it becomes a mushroom. It is the fine, root-like web of threads that spreads through wood or soil, gathering what it needs, until conditions are right to push up a fruiting body. It is real lion's mane tissue, and there is nothing false about it.
The catch is how it is usually grown for powder. A producer sterilises a bag of grain, often oats, rice, or sorghum, and lets the mycelium spread all the way through it. Separating the fine threads from the grain afterwards is slow and costly, so in practice the whole block, mycelium and grain together, is dried and milled into a single powder. That is faster and cheaper than growing, harvesting, and extracting the actual mushroom.
What you end up with is a powder that is part fungus and part grain. The grain brings its own carbohydrate, mostly starch, along for the ride. This is not unsafe, and it is not a trick in itself. What matters is that a good share of a mycelium-on-grain powder is grain, not mushroom. That one fact drives the numbers on the label.
Beta-glucans vs polysaccharides
Most of the confusion around lion's mane, and most of the loose marketing, lives right here.
A polysaccharide is just a long chain of sugar molecules. That is a broad group. Beta-glucans, the compounds people are actually looking for when they buy a mushroom, are polysaccharides. But so is starch, the main carbohydrate in grain. So is the glycogen in animal tissue. The single word "polysaccharides" covers all of them at once.
Now put that next to a mycelium-on-grain powder, which carries a lot of grain starch. If a label reports a big "polysaccharides" figure, that figure can quietly include the starch from the grain. A high polysaccharide number can be measuring leftover grain as much as it is measuring the mushroom. It looks impressive and it is easy to print.
The beta-glucan percentage is the harder, more honest marker, because it counts a compound that comes from the mushroom's own cell walls and not from grain starch. Our fruiting-body extract reads 26.20% beta-glucans against 30.22% total polysaccharides. Those two numbers sit close together, which is what you would expect when there is little starch padding the total. On a grain-grown powder, the gap between a high "polysaccharides" number and a low beta-glucan number is usually much wider.
A large "polysaccharides" figure is easy to print and easy to inflate, because grain starch is a polysaccharide too. The beta-glucan percentage is the figure that counts a compound from the mushroom rather than from the grain it may have grown on. If a seller shows you only "polysaccharides", the beta-glucan number is the next thing to ask for.
Hericenones and erinacines
Two names come up around lion's mane more than any others: hericenones and erinacines. They are two families of compounds that chemists have isolated from Hericium erinaceus and given those names. Hericenones were identified in the fruiting body of the mushroom.
We are naming them here for one reason only, so that you recognise the words when a label or an article puts them in front of you. That is the whole of it. We are not going to tell you what they do, because attaching an effect to a compound name is exactly the line this page will not cross, and it is a line a great deal of lion's mane marketing steps over without a second thought. A compound being present in a mushroom, and that compound doing something for a person, are two very different statements, and only the first one belongs on a label.

How to read a lion's mane label
Once you know the two raw materials and the two kinds of number, a label reads quickly. Four questions do most of the work.
Does it say "fruiting body"? If the front says only "lion's mane", or uses "mycelial biomass" or "full spectrum" without naming the fruiting body, it may well be mycelium-on-grain. The honest fruiting-body products tend to say so plainly.
Is there an extract ratio? A ratio such as 8:1 tells you the mushroom has been extracted and standardised. A product sold as an "extract" with no ratio stated anywhere is worth a second look.
Is there a beta-glucan percentage, not just "polysaccharides"? As above, the beta-glucan figure is the specific one. A label that shows a big polysaccharide number but no beta-glucan number has left out the more telling half.
Is there a third-party certificate of analysis? A number a lab will put its name to, per batch, is worth more than a number printed on a pouch. If a certificate is offered for each batch, that is a good sign.

It is not a scam. You just want to know that is what you are buying, and pay for it accordingly.
